It is the morning of September 2nd that are given the first shots secateurs.
Sorting is done directly in the vineyard by the cutters. This year it is about eliminating the berries dry and wilted.
This year 6 days of harvest will be necessary to carry out the whole harvest.
In the winery …
The grapes arrive in the vats to be cured.
For a few days the vats are monitored, followed.
On this vintage, a quick washbasin is used to revitalize each cuvée (information given to the must on the respiratory rhythm – oxidation / reduction).
Then from September 17 that begins the first devattage.
These will end on the 22nd.
In the cellar …
And then comes the time of the enconnage as of September 25th.
on the 24th of September, the prospecting for flavescence dorée takes place.
